Typical Dinner: Donburi (Tofu & Squash)

squashtofudonburi1

April 24th – Here’s a peek into a night spent alone. With Danny out on the town, I was left to my own devices. We used to eat tofu all the time, but then Dan got turned off of it (dunno what happened), so I had some extra tofu laying around. Okay, in full disclosure, it was expired tofu, but I figure it was okay to eat a few days (read: week or two) past the deadline. I stir-fried it up with some yellow squash and rooster sauce (along with other things like soy sauce and some sugar). I served it donburi style atop some nice, hot rice. It was too filling — I would have been full on half the amount!
