It’s no secret that I am a fan of greek yogurt. I like the slight tang that it offers and the thicker consistency. Even my cat, Leopold enjoys it!

When I received a lovely package from Chobani as part of their #MadeWithChobani campaign, we were so excited!

We’ve already set to work putting the greek yogurt to use in many ways.

Replacing  Sour  Cream  or  Mayonnaise

Using Greek Yogurt is a great way to make a dish healthier while still keeping the tang of sour cream or mayonnaise. Some ways that I’ve used greek yogurt to replace those ingredients are:

Adding  Creaminess  to  Sauces  and  Soups

Sometimes you need just a little more creaminess in a dish but you don’t want the added fat. I often add some Greek yogurt to my dishes to help emulsify sauces or thicken broths. Recently I boiled some pasta, added some Indian Vindaloo sauce, mixed it with Chobani Greek Yogurt and Voila!.

In  Desserts

Yogurts are a good dairy-alternative in baked goods as well, especially breads and muffins.

As  the  Star

And of course, who couldn’t love an amazing yogurt dip to cool a hot dish or a frozen yogurt?

Black Tea Banana Bread

For this month’s Secret Recipe Club, I had the pleasure of being assigned Ros’ blog, The More Than Occasional Baker. Now, this is my kind of blog! I have a major sweet tooth and prefer baking over cooking. Unfortunately, this made it extremely difficult to choose which recipe I wanted to make since everything looked good to me.

I was choosing between Pineapple TartsEarl Grey Tea CookiesBananas Foster Crepe CakeGinger & Chocolate Oat CookiesPistachio, Yogurt, and Elderflower CakeNo-Bake Chocolate Peanut Butter Pretzel BitesHomemade Vanilla MarshmallowsMadelinesWhite Chocolate & Macadamia Cookies, and Earl Grey Tea Banana Bread.

In the end, I went with whatever recipe I had the most ingredients for. I didn’t have any more Earl Grey tea on hand since we used it all up making Lavender Earl Grey Truffles for Christmas a while ago, but thankfully my friend Stephanie had just gifted me with a whole box of Thai Black Tea that I swapped in.

To continue the Thai-tea theme, I drizzled some thinned out condensed milk on top. The cake was quite dense, which I think was a result of the containers I baked them in (I had this issue with some zucchini bread I baked in these containers) as well as the fact that I just mashed the bananas instead of mushing them to a pulp and substituted yogurt for the sour cream. I also used some of the wet tea leaves to use in the bread itself since I liked the color and texture contrast.

Healthy Spinach Artichoke Dip

Spinach artichoke dip is one of the things that I sometimes indulge myself in when I eat out at restaurants. It always seemed a mystery how the dip would be perfectly gooey, cheesy, and warm. I’m not going to lie, I have rushed into a dish of dip too early a few times and burned the roof of my mouth.

So you can imagine my surprise when I found out that not only was spinach and artichoke dip easy to make, but it’s also easy to make healthier. I’m not going to say that this is healthy because it is spinach and artichoke dip. I’m also not going to say that I have devoured a big dish of only this for dinner, because that would be crazy, right?

I crafted this recipe from one that I saw on Washingtonian and have served it fresh on Super Bowl Sunday, used it as a spread on a sandwich, and re-heated it for a side for normal weekday dinners. It’s easy to customize to add more or less moisture and flavor, so mix it up to your liking! Serve with chips, crackers, or pretzels (trust me, they’re all good).

Pork Souvlaki with Tzatziki

I got the idea for this recipe from Serious Eats. This recipe “passes”, and gets to be written in the real Recipe book!

The main part that I kept over-looking was the “marinate over-night” part, so just to let you know, you need to marinate this over night!!! Okay, now that that’s over. This was served with red lentils cooked in chicken broth with some sprouts and roasted red pepper and toasted naan. Sounds good, right? The lentils were bad, but everything else was delicious!
