Thai Basil Pesto Pasta with Shrimp

I’ve been wanting to make this pasta ever since I saw it appear on Woks of Life in May. Unfortunately (or fortunately?) a pair of doves made a nest in our Thai basil plants so we couldn’t kick them out and harvest it. When I was able to get to the Asian supermarket in the suburbs, I went ahead and doubled the pesto recipe. Stored it in a jar, I’ve been using it in sandwiches, chicken salad, and even pizza.

Do yourself a favor and make this Thai Basil Pesto pasta, stat! If you can’t find Thai basil you can sub in regular basil or even cilantro.

Singaporean Curried Vegetable Noodles

For this month’s Secret Recipe Club I got to take a mini trip around the world with Tara’s Multicultural Table. Tara actually has a similar background to me, including Filipino, Japanese, German, and the Southern United States. Her passion for different cultures through food is apparent through her delicious blog. Looking through her recipe index was painful — there were so many things that I wanted to make, how could I choose between Northern Thai Curry, Mango Cinnamon Basil Smoothie, Afghani Kebab with Gravy, Macarons with Vanilla Cream Cheese Filling, Yaki Udon, Cong You Bing (Scallion Pancakes), or Sichuan Wontons in Chili Sauce.

My decision was made instantly easier when I spotted her recipe for Curried Vegetable Noodles.

One of our favorite dishes to get when we order takeout or visit the local dim sum restaurant is Singaporean Curry Noodles. It has the perfect level of spiciness (flavor, not heat) and the little nuggets of meat and vegetables break up the monotony of the noodles. I was a bit lazy and used some stir fry vegetables and packaged sauce from Trader Joe’s, but I counter-acted that laziness by topping the noodles with some home-grown Thai Basil.

To make it closer to the takeout version, throw some chicken, pork, or shrimp in with the noodles. Or, as my fiancé suggested, the addition of some egg would add a nice amount of protein.

Salad with Pickled Beets & Feta

For this month’s Secret Recipe Club, I was paired up with Turnips 2 Tangerines. After trying out some apple cider garam masala pickled beets at my local farmer’s market, I decided to tweak Lynn’s recipe for pickled beets. Thankfully I was able to find pre-cooked and peeled beets, so this recipe was even easier!

I simply subbed out the vinegar for apple cider vinegar and the spices for garam masala. I used the pickling liquid to make a simple vinaigrette (1 tablespoon pickling liquid, 2 tablespoons extra-virgin olive oil or to taste, dash salt and pepper, 1/4 teaspoon mustard).

The bitterness of the greens, saltiness of the cheese, and tang of the beets all go well together. The cider vinegar and spices keep the beets from tasting too “dirty”, but they still keep their earthiness.

I’ll have to go back to Turnips 2 Tangerines and look at the other recipes I was having trouble choosing from, including: Spicy Refrigerator Pickles, Surprise carrot cake, pear nut cake, and chocolate pecan coffee cake!
